Oat & Millet Breakfast Porridge
The days are getting shorter, and the mornings are darker and colder. Perfect time for some warm and chocolate-y breakfast porridge. This vegan and gluten-free bowl of goodness will keep your tummy warm and satisfied until it’s time for lunch.
1/4 cup millet
1/4 cup rolled oats
1/2 cup water
1/2 cup plant-based milk
2 tsp cocoa or carob
1/2 tsp spices (cinnamon, vanilla extract, or a pumpkin spice mix)
Decorations: totally up to you!
Optional: coconut sugar for extra sweetness
Mix the millet, oats, water and plant-based milk together in a pot on the stove medium-high heat. Using half water and half milk will ensure super creamy breakfast porridge.
Keep stirring this mixture over the heat until it gets thick (depending on the type of oats and millet you use, this might take 5-15 minutes).
Shortly before the mixture is ready, add in your cocoa or carob and your spices.
Pour into a bowl and decorate your breakfast to your heart’s content. We chose frozen raspberries and blueberries (no more fresh ones this year), bananas and chia seeds as well as some high-quality granola.
